Cave cidricole
It could seems odd, because our house is in the center town of Bayeux, but we are also farmer producers of cider's apples and we make Cider, Calvados, Aperitif and jelly with it.
In our cellar sleep hundreds liters of Calvados made from our orchards all situated around Bayeux.
Our orchards includes 3 thousand apple trees. We harvest more than 1 hundred tons of apples each year.
Our orchards are not made like the ancient ones were. We have low apple trees, easier to keep well-maintained, but issued from the same old varieties which have so particular flavour of bitter or sour.
This different type of orchard mean a different way of cultivation; our fields are specialized. So we don't have any cows under apple trees.
The apples are harvested from the middle of September to the end of December. We have about 20 varieties of apples which are not mellow at the same time.
